I hate cooking after sundown because... well, it doesn't photograph very well. My kitchen is blessed with three tall windows. During the day my cat and I bask in the stretching reflections on the hardwood, along with the yelps and roars of the elementary across the street. Come dusk, the only light source is a low-watt fluorescent bulb from the dark ages. But I needed to share this very satisfying rendition of vegan mac 'n cheese! I used Isa's eazy breezy cheezy sauce and threw in some sweet peas for added texture and color. Perfect with mini-shells in your chipped favorite bowl. Now that's comfort food and super easy. I suggest a few cups of hot tea afterwards. I make this recommendation after witnessing how quickly and effortlessly hot water removed the thick sauce off the pot. I think you hear me knocking.

I love autumn and winter, but it does get hard to take dinner pictures. Leftovers the next day aren't always photogenic.
